About the company


Our client’s company was founded back in 2001 as a foundation for the existing passion and obsession for perfumery in three perfume brands and currently has over 100 shops in the GCC.

 

From perfumes, they have expanded their unique Emirati concepts into Food & Beverage with two different restaurant brands for which they are now hiring an exceptional Executive Chef – someone who is very clear in terms of taste and look and feel! Someone who masters consistency, can think out of the box and create the extraordinary!


Job description 

  • To ensure that all outlet reports, schedules, standard recipes, menus, food presentation photographs, and correspondence are completed in an accurate and punctual manner.
  • To develop menus and "specials" that meet the needs of the target market and are in line with the operating concept of the restaurant.
  • To develop menus and set standard recipes which allow the restaurants to run at an acceptable food cost, thereby satisfying guest needs and expectations.
  • To have a complete understanding of, and adhere to the company’s policy relating to fire, hygiene, sanitation, and safety.
  • To ensure that operating and kitchen equipment is maintained to a good standard with minimum breakage.
  • Responsible for the audit requirements for HACCP and Dubai Municipality as needed.
  • Check incoming produce, ensuring that all food merchandise is in accordance with order sheets, receiving records, and purchasing specifications.
  • To maximize colleague productivity and morale and consistently maintain discipline following restaurant guidelines and local legislation.
  • Adhere to the restaurant’s food preparation and presentation guidelines to ensure consistent quality culinary offerings to our guests. Continually look to recommend improvements and additions to the restaurant’s presentation guidelines.
  • Maintain food safety & protection. All food in working areas should be following food handling techniques, including dating, proper storage, rotation, etc.
  • Take responsibility for asset management of all outlet property and facilities.

Qualifications


  • Minimum 3-5 years of similar exposure in a busy culinary operation
  • Able to manage and lead by example a diverse group of culinary associates 
  • Have a strong set of culinary skills due to the nature of the operation 
  • Strong creative skills and want to create out of the extraordinary both in visual presentation as well as taste
  • Basic understanding of the financial aspects of the operation 
  • Knowledge of food safety & hygiene 
  • Drive & determination 
  • Adaptable & a team player who knows how to bring the very best of the team
