About the Job

As the Head Sommelier, you will be expected and responsible to the head of the department to lead the Wine or Sommelier Team. You will deal with all aspects of the wine operational service of the entire restaurant. You will also be projected to contribute to the consistency and enhancement of the restaurant wine lists.

You must be able to provide an efficient, engaging, friendly, and charismatic service to all our guests and patrons. As the head of the department, you must be able to manage the entire team and meet the operational standards with consistency.

You will need to be on top of all training and development of your respective team members to be more sharpened, equipped, and knowledgeable, able to make sure that the team is striving for the highest possible satisfaction in every operation.


Key Responsibilities

 

  • Take the lead on improving wine selection while ensuring the highest quality of selected wines according to the market’s availability and best value considerations
  • Coordinate with the Head of Bars on forecasting, reviewing, and organizing the perfect selections of cigar items for the restaurant too
  • Coordinate with the Kitchen Department on analyzing the perfect food and beverage combinations for the satisfaction of all guests
  • Always make sure to observe all Dubai/UAE respective and related authority’s protocols and ensure that they are always met without fail.
  • Vigilant in ensuring correct pricing, punching of items, and vintage listings all the time without fail
  • Manage the correct and concise ordering of wine stocks 
  • Ensuring that every inventory on a daily/weekly/monthly basis is perfectly done without discrepancies
  • Monitor the wine and beverage cost in each area of restaurant operations and align them as per the business requirements
  • Consistently contribute to building the sales forecast and schedules to achieve the desired productivity operational targets
  • Superbly and consistently identify and analyze the most profitable Wines & Spirits to sustain the needs of the restaurant
  • Supervise the Wine team members on proper daily work assignments to take full advantage of their productivity at all times
  • To smoothly run the entire wine service on a demanding and busy restaurant operations
  • To follow the job chats, probation evaluation, and performance review as per the calendar cycle as timely as possible
  • To create an enthusiastic, clear, and open philosophy of communication with all team members on both formal and informal aspects

Requirements:

  • Must have a vast knowledge of all aspects of the wine operational service
  • Must contribute to the consistency and enhancement of the restaurant wine lists.
  • Must have experience managing a team of sommeliers
  • Must have excellent knowledge of different kinds of wines
  • Must have a proven track record of working for high-end restaurants.
  • Must be friendly and efficient in providing excellent service to guests and patrons
